On Friday 13 December, twenty-five winemakers were invited to Château Larose (Medoc) by Diam Bouchage for a surprising conference on sensitive crystallization applied to wine and wine closure.
Former technical director of the Thiollet Oenological Laboratory, Margarethe Chapelle has been working in the field of oenology for over 30 years. In 2011, based on knowledge and expertise gained over twenty years in sensitive crystallization,she decided to devote herself fully to this discipline by creating her consultancy firm. Today, she advises and supports winemakers throughout Europe.
Sensitive crystallization enables the quality of a product to be assessed where quantitative analyses of its chemical composition have reached their limits.
How can we understand and know what is entailed in the life of a great wine or, on the contrary, only allows random premature aging? How can we tell if an agricultural practice is good or if, on the contrary, it leaves behind inert and unproductive soils for future winegrowing generations? During her talk, Margarethe Chappelle took us right to the heart of the living in order to better understand it and throw light on the gray areas that sometimes limit winemakers’ choices to just a few technical options.
After numerous enthusiastic questions, the participants continued the discussion during a buffet lunch and tasting of grand wines with Diam closures.
